The mountains of Shu and deadly climate of Wu may be reason why they couldn't support as many people in ratio to their land size when compared to Wei.

I think Cao Cao even said, "If we march southward, it will be the death of all of us"

If he says it, then it really must be a deadly place!

Wei has no more famous commanders, Shen Ai takes lead of the vanguard!

Really? Was that before or after Chi Bi? If it was before, then his attacking Wu at Chi Bi was pure stupidity, if it was after, then it was probably just based on Chi Bi.

I think one of his advisers, maybe Xun Yu or Cheng Yu asked whether we wanted to settle south or north when he was starting out. He said north, which was a smart option in a lot of ways.

Chi Bi was just one final battle to unite the land. He didn't think that the people were a threat, more that the climate was deadly for people, so he abstained going until he absolutely needed to.

Well, that makes sense. Even though the north is less defensible, it is much more fertile and populated.

I agree. Cao Cao was no admiral and his cavalry was pretty good in later years so the central plains were a good choice. Yi and Hanzhong was a good defensive area, but isolated.

How effective could the rivers have actually been as a major defence? They're so long, and narrow, the crossing could take place at any point and very quickly too.

Wu had a navy of a few thousand ships. Shu and Wei which had fewer rivers, had a weak navy and thus couldn't seem to be able to penetrate Wu as well.
