Cambridge University is offering, as a free PDF, the book Animals Through Chinese History: Earliest Times to 1911 edited primarily by Roel Sterckx, who has written numerous books on Chinese mythology, religion, and... animals! As a compilation of articles, there are about a dozen contributors, including some other recognizable names.

The articles cover the importance of various animals throughout Chinese history, including a chapter about animals in medieval China by Dr. Kevin Knapp (who wrote Early Medieval Chinese Texts: A Bibliographical Guide with Albert Dien and Berkowitz).

I'm unsure how long this book will be available for free, so download it now here. (Link opens as a PDF.) It's normally around $70-$100 USD new.
